Roasted Cauliflower, Raisins, and Chickpeas with Turmeric and Ginger
3 tbsp. olive oil
1 tbsp. black mustard seeds
1 tbsp. chopped garlic
1 tbsp. grated fresh ginger
1 tsp. turmeric
1 head cauliflower, cut into florets
1 can unsalted chickpeas, rinsed and drained
¼ cup raisins, soaked in water for 5 minutes then drained
Sea salt and red pepper flakes to taste
1 handful fresh parsley, chopped
Preheat oven to 425 degrees F.
Whisk together the oil, mustard seeds, garlic, ginger, and turmeric in a small bowl.
Place cauliflower and chickpeas in a large baking dish, toss with the oil mixture and season with sea salt and red pepper flakes.
Roast until lightly golden brown and just tender (about 20 to 25 minutes). Add raisins and roast 2 more minutes. Top with fresh parsley. Serve hot.
